Cathy’s Italian Salad Dressing

1/4 C freshly squeezed lemon juice
1/8  C  water
2/3 C olive oil

Dry herbs / spices

¼ tsp. garlic powder
¼ tsp onion powder
1/8 tsp ground black pepper
¼ tsp salt (salt to taste)
1 tbs. dry parsley


For fresh Herbs:

1 clove of garlic grated
1 tsp. fresh grated onion
1-2 tbs. freshly chopped parsley


Feel free to substitute your favorite herbs and spices!
I usually use the Good Seasons cruet with the pre-measured markings on the bottle. You can’t go wrong with the proportions.

Mid-Eastern Lemon Rice:

2 cups of cooked rice cooled & set aside (I’ve never made it with quick-cooking rice)
= 1 cup rice
= 2 cups of water
= 1 tbsp of oil
=  salt if desired (I prefer to add salt to the cooking of the rice)
Place oil in saucepan; heat on Med. Temp.
Add rice & sauté for about 3 minutes on Med. heat till rice becomes opaque but not brown.
Add water till boiling. Stir slightly & cover. Reduce heat to low boil for 10 minutes.
Shut off & set aside for 10 minutes.
When done, remove lid to cool.

= 2 tbsp oil
= 1 onion chopped
= 2 cloves of garlic chopped (or more if you like)
= 1 bunch of scallions chopped
= ½ cup dry roasted peanuts
= ½ bunch of fresh parsley finely chopped
= 1 lemon: wash & grate the rind for the ‘zest’
                : cut in half & squeeze fresh lemon juice
= salt & pepper to taste if desired


Add oil in pan. Heat on Med. Temp. Sauté onions & garlic till tender.
Add scallions. Sauté till tender.
Add 2 cups of cooled rice. Stir fry till hot stirring gently
Add nuts & parsley. Stir gently.
Turn off heat.
Add lemon & zest. Stir gently.
Serve.

Almonds or pine nuts make good substitutes for peanuts. Good without nuts too!

Red Cabbage

Try this for a great side dish with pork. --Anne
To serve six:
4 cups shredded red cabbage
2 medium apples, coredd and cut into wedges
1/4 cup red wine vinegar
2 Tbsp brown sugar

Place in saucepan over medium heat, mix well. Cover and simmer about 10 minutes until cabbage is crisp but tender.
for fewer servings, apportion all ingredients as needed.

Here's a quick, delicious summertime treat for the recipe file. I always get requests for them.

Brownie Ice Cream Sandwiches


1 box of brownie mix for 13 x 9 pan
2 eggs
1/2 c oil
1/4 c water

 ice cream - approx 1 quart mint chocolate chip is great or your favorite flavor

    Prepare brownies according to directions for fudgy, not cake like brownies, using the eggs, oil & water. Be sure not to overcook them. Cool. While cooling let ice cream sit at room temperature to soften. Cut brownies in half so you have 2 - 61/2 x 9 pieces . Place approx 20" plastic wrap on flat surface & place 1 piece of brownie on it.  Spoon ice cream all over top. Place 2nd piece of top. Wrap plastic around, use 2nd piece if necessary, pressing down slightly. Freeze 1 hour, then cut into squares or rectangles. You can melt chocolate & drizzle over top & add sprinkles too!
